The human intake of divers persistent organic pollutants is by far dominated by food. For dioxins e.g. food contributes to more than 90 - 95% of the intake with a main contribution of fatty food of animal origin.

Therefore, food are under special regulation and corresponding strict tolerable maximum levels are fixed. In the European Union such maximum levels are in force since 2002 (dioxin-like PCBs included in the meantime). These maximum levels cover:

• meat, meat products, liver, and fat of certain terrestrial animals
• muscle meat, fat, and oil of fishes and products thereof
• milk and milk products
• hen eggs and products thereof
• vegetable oils and fats

Several contamination accidents during the last years demonstrated the necessity of corresponding control analyses covering the complete trade process (production, processing, final product, retailing incl. logistics).
